Wasabi Cucumber Salad

A refreshing salad with a bit of a kick from the Wasabi makes this a perfect summer side.


2 tbsp white sesame seeds

2 whole green onions

1 tsp sesame oil

2 tsp honey

2 tbsp rice vinegar

2 large carrots

1 1/2 tsp Wasabi Powder

2 large cucumbers


Peel the cucumbers, cut each one in half lengthwise, and use a melon baller or spoon to scoop out the seeds. Cut the cucumbers widthwise into 1/4-inch crescents.

Peel and shred the carrots.

Thinly slice the green onion.

Add the vinegar and honey to the wasabi and whisk until smooth. Whisk in the sesame oil, salt, and pepper.

Just before serving, add the cucumbers, carrots, green onion, and sesame seeds to the dressing and mix well.
