Turkey Sausage Orecchiette

Delicious turkey sausage, healthy broccoli, and tender orecchiette pasta makes this a great lunch, dinner, or left over meal for almost any occasion.


salt/pepper to taste

2 cloves garlic, minced

olive oil

8oz Orecchiette pasta

1 bunch of broccoli rabe (rapini), leaves chopped

1 small head of broccoli, florets cut and chopped

1 to 2 cups of chicken broth

1 to 2 tablespoons crushed red pepper flakes

1 small onion, minced

2 to 3 Mild turkey sausages, casings removed


Boil salted water in a large pot. Add broccoli rabe and florets, coke for no longer than 1 1/2 minutes. Remove from water onto a dish, add Orecchiette and cook to box directions.

In a large non-stick skillet heat olive oil over medium high heat. Add onions for about 2 minutes. Then add garlic for another minute. Then add sausage and crushed red pepper flakes and crumble with a wooden spoon.

When sausage has browned, add broccoli and broccoli rabe to the skillet and sauté' for 1-2 minutes. When all ingredients are heated through, add 1-2 cups of chicken broth. Salt and pepper to taste.

Reduce heat on pan and simmer for 3-5 minutes. When the pasta is done, drain and return to same pot.

Add sausage and broccoli mixture into the pasta and stir to mix evenly.

Serve in a bowl and enjoy!!!
