True Lemon Hummus

Yields 1 (6 servings × 3)
I visit many off the wall food markets and often find some unique and delicious treats. This is my attempt at duplicating the a hummus I found at a little Mediterranean market in my home town. The secret is the lemon.
to taste salt and pepper
1 head roasted garlic
0.25 cup extra virgin olive oil
0.5 cup fresh squeezed lemon juice
1 tablespoon tahini
1 15oz can garbanzo beans
Drain and reserve the liquid from the can of garbanzo beans.
Place the beans, tahini, lemon juice, olive oil and 1/4 cup of the reserved liquid in a food processor.
Process for two to three minutes. Add some of the reserved liquid to get the desired consistency.
Serve with wedges of pita bread or fresh lavash.
