Yields 24 (12 servings × 2)
I use lean pork tenderloin in this healthy and delicious Asian appetizer to keep the fat and calories down.
1 1/2 pounds pork tenderloin, cut into 1-inch thick cubes
2 Thai chile pepper, seeded and finely chopped
2 tablespoons cilantro
1 1/2 cups coconut milk
1/4 cup peanut butter
2 tablespoons fresh lime juice
1/4 cup soy sauce
4 cloves garlic, minced
Combine all ingredients in a medium bowl. Add pork and let marinate 2 to 4 hours.
Remove the pork from the marinade and thread on skewers.
Serve with peanut sauce (see separate recipe).
