An Indian bread, naan is excellent to serve when you'd like to tone down spicy dishes!
nonstick cooking spray
1 large egg
0.5 cup skim milk
0.125 tea. baking soda
0.25 tea. salt
1 0.5 tea. baking powder
1 tea. granulated sugar
2 cups all-purpose flour (reserve 2 Tbl.)*
In large bowl, combine flour, baking powder, sugar, salt, and baking soda, to blend thoroughly. In small bowl, beat together the milk and egg, and add them to the flour mixture, stirring constantly, til very well blended.
Mix by hand, sprinkle work surface with 1 Tbl. reserve flour; turn dough out onto prepared work surface and knead for 10 mins. Spray a bowl with nonstick cooking spray; place dough in bowl. Cover loosely with plastic wrap or a damp towel and let rise in a warm, draft-free place for 3 hours.
Place a large baking sheet on the center oven rack, and preheat to 450 F. Sprinkle work surface with 1 Tbl. reserved flour; turn dough out onto prepared work surface. Divide dough into 8 equal pieces and flatten each piece into a teardrop-shaped leaf, 3/8" thick.
Arrange the naan on the preheated sheet, and bake 10-12 mins., or til firm. Slide briefly under a broiler to brown the tops lightly. Serve hot or at room temperature.
